It was created by the nuns of the Visitandine order. These small cakes, then called "Visitandines," were intended to compensate for the prohibition on meat consumption in convents. They are also credited with making use of egg whites, as the nuns already used the yolks as a binder for their paints. The influence was so profound that the terms "visitandines" or "friand" (in Normandy) are still used in some shops.
