The Oranais is a type of Viennese pastry. It is believed to originate from Oran (Algeria), as its name suggests. In Brittany, the oranais is known as "croissant aux abricots" (apricot croissant), and in the south of France, as "abricotine."
Composition: It consists of a brioche or puff pastry filled with pastry cream and two apricot halves placed at opposite corners of a square of dough. The other two corners are folded over, then cooked to golden perfection.
